Wine maker notes
Grapes are de-stemmed. The must and skins stand forfour hours before being gently pressed by a pneumatic press. Fermentation takes place in stainless steel tanks and the wine is stored in tank up to five months before bottling.

Producer
Roman Pfaffl is often thought of as "Mister Veltliner". While it is true he has made a specialty out of this grape, it would not be fair to forget his other wines, such as his peerless Riesling, his Sauvignon Blanc and his red Cuvée Excellent. The Pfaffl winery specializes in dry white wines, which account for some 70% of the overall production. The proportion of red wines, though, is rising.

Roman Pfaffl was one of the first Weinviertel producers to recognize the potential of the Grüner Veltliner grape, which he continues to vinify with great passion. His success is also evident in the range of Pfaffl wines, which includes several single-vineyard Veltliners, each one bespeaking eloquently the terroir of its origin.

Riesling and Pinot Blanc are two further varieties Pfaffl has elevated from traditional wines into something altogether more interesting. Here, special care in the vineyard and cellar are rewarded with wonderful fruit and good body in the wines. Among the varietals Pfaffl helped to pioneer in the region are Sauvignon Blanc and Chardonnay, which are ideally suited to the conditions of the region.

Among the red varietals, Pfaffl concentrates on Blauer Zweigelt and Cabernet Sauvignon. Some of the Zweigelt grapes are vinified individually, giving them the opportunity to show their velvety cherry fruit. Together with the sturdier structure of the Cabernet, they form the cuvée Excellent.
