Bay Rum Cocktail

Today we share with you our version of a cocktail discovered while flipping through the pages of The Drunken Botanist by Amy Stewart.  It employs St Elizabeth Dram, a lovely island spiced liqueur made from allspice berries also known as Pimento dram.  It is a wonderful versatile ingredient to have on your back bar and one that is key in today’s Bay Rum Cocktail.

The Bay Rum Cocktail

In a shaker glass filled with ice add:

• 1½ Ounces Dark Rum (we used Myers’s Dark)
• ½ Ounce St. Elizabeth Allspice Dram
• ½ Ounce Simple Syrup
• Dash of Angostura Bitters
• ½ Ounce of Fresh Squeezed Tangerine Juice

Shake all the ingredients till painfully cold.  Strain and serve over fresh ice in an Old-Fashioned glass.  Garnish with an orange twist.
