Tarragon Collins

 

Today we take a classic cocktail and put an herbal spin on it.  The Tom Collins is an enduring Gin highball made with lemon, sugar and club soda. We add to that a bit of Tarragon for a new spin on an old classic.  As the weather warms tall cocktails are in and the Tarragon Collins is a delightful refresher perfect for the season.

 

Tarragon Collins

In a shaker glass filled with ice add:

  • 1 ½ Ounces of Gin (Old Tom preferred but London Dry will do)
  • 1 Ounce Fresh Squeezed Lemon Juice
  • ½ Ounce Tarragon Simple Syrup

Shake ingredients and strain over fresh ice into a highball glass.  Top with club soda.  Stir in a few fresh Tarragon leaves for garnish.  

 

Tarragon Simple Syrup

In a medium saucepan add:

  • 1 Cup Water
  • 1 Cup White Granulated Sugar

Bring to a boil and reduce heat.  Add 6 sprigs of Fresh Tarragon.  Simmer for 5 minutes.  Strain syrup into a sterile glass bottle (discarding tarragon).  Syrup will keep refrigerated for one week.
