The Monk’s Respite

Today’s clever cocktail comes to us from the Smuggler’s Cove book of “Exotic Cocktails, Rum and the Cult of Tiki”. This particular drink is Tiki inspired though made with a base of Gin. The use of Coconut water provides a tropical backdrop and yellow Chartreuse adds an herbal accent that pulls it all together. It is a tall drink that is ever so refreshing, offering the imbiber subtle bits of nuance with each sip.

The Monk’s Respite

In a shaker glass filled with crushed ice add:

  • 1½ Ounces of Gin (Broker’s is suggested by the cocktails creator)
  • 3 Ounces of Coconut Water
  • ½ Ounce Freshly Squeezed Lemon Juice
  • ¼ Ounce Yellow Chartreuse
  • ¼ Ounce Honey Syrup*
  • 1 Dash Orange Bitters

Shake Till Painfully Cold.  Pour everything (ice included) into a tall Collins glass.  Top with 1 ounce of club soda.  Finish with your favorite tropical garnish.

*Honey Syrup

In a small saucepan on low heat add:

  • 3 Ounces of Water
  • 6 Ounces of Honey

Heat slowly stirring constantly until honey and water are combined.  Remove from heat and cool. (Keeps in the refrigerator for 5-7 days).
