Pimm's Cup Cocktail

Mon, Apr 13, 2026  |  cocktail recipes

The story of Pimm’s begins in 1823, when London shell‑fish monger James Pimm set out to create a very specific drink: the perfect companion for oysters. From his Central London Oyster Bar, Pimm created a gentle, refreshing beverage—a gin‑based concoction infused with fruit juices, herbs, and spices, designed to complement food rather than overpower it. The result was an instant success and the foundation of what would become one of Britain’s most enduring drinks.

Over time, several variations followed, each numbered under the Pimm’s name, though Pimm’s No. 1 remains the most familiar and widely available in the U.S. It occupies a category all its own—somewhere between a bittersweet aperitif and a ready‑to‑drink cocktail—pleasant on its own, yet easily elevated with a few simple additions. Traditionally, that enhancement comes in the form of the classic Pimm’s Cup: Pimm’s No. 1 served tall over ice, lengthened with club soda, and finished with a refreshing spear of cucumber. Light, crisp, and relatively low in alcohol, it’s an ideal choice for brunch, lunch, or any occasion where the day still has plans for you. While countless variations exist, there’s something timeless about starting with the original—then letting your creativity take it from there.
